Honey Roasted Chicken Clubhouse Sandwich

I have been craving a simple toasted chicken clubhouse sandwich for months now.  Any restaurant that had a chicken clubhouse listed on their menu had their own version which just wasn’t what I wanted.  I didn’t want a baked chicken breast with prosciutto, lettuce and roasted tomato on an rustic Italian roll with garlic and herb Aioli.

I just wanted the sandwich of my childhood—three pieces of white bread toasted and slathered with mayonnaise, thick slices of juicy tomato, thick slices of honey chicken breast carved from the roasted chicken topped with 4 slices of thick cut bacon and surrounded by crisp lettuce. I wanted the sandwich cut in 4 triangles and held together by extra long tooth picks. I made it myself.

Sometimes it’s the simple things in life that give the greatest pleasure!

I remember this restaurant across the street from our high school where my friends and I used to occasionally go for lunch.  The name escapes me and yes it was that long ago. They made this chicken clubhouse sandwich with a side order of coleslaw and the best fries and gravy. The restaurant was just a mom and pop greasy spoon but their food was delicious!

Honey Roasted Chicken Clubhouse Sandwich


  • 3 slices of White Bread Toasted
  • 2 tablespoons of Mayonnaise
  • 4 slices of Tomato
  • 1 large leaf of lettuce
  • 3 slices of honey roasted chicken breast
  • 4 slices of thick cut bacon


  • I used a honey roasted chicken and sliced off 3 pieces from the breast but you can use a rotisserie chicken if you don't have the time
  • Toast your white bread and then slather mayonnaise on each piece. On the first piece of toast, with mayonnaise side up, add your lettuce then and add your slice of chicken and top with 2nd piece of toast mayonnaise side up.
  • Place your lettuce then your slices of tomato. Add salt and pepper to taste and top with last piece of toast mayonnaise side down.
  • Slice your sandwich diagonally right to left then slice again left to right. You now have four triangles. Stick a long toothpick in each triangle to hold it together and place on your plate.
  • Remember to take the toothpick out before eating and enjoy your diner chicken clubhouse sandwich
