Grilled Cheese Sammie with Onion Bacon Jam

Bacon onion jam sandwiched between slices of American processed cheese on sourdough bread and grilled—we couldn’t shovel them into our mouths fast enough. The onion bacon jam just takes an ordinary grilled cheese into a totally different realm of yum! Can you tell we loved them?

Grilled cheese sandwiches always remind my hubby of his childhood.  They were his favorite lunch. And somethings haven’t changed much.

These sandwiches are pretty filling by themselves but if you’re still hungry they go deliciously with roasted tomato soup.  Mmm Mmm Mmm

Grilled Cheese Sammie with Onion Bacon Jam

Total Time: 15 minutes

Yield: 1 sandwich

Grilled Cheese Sammie with Onion Bacon Jam

Ingredients

  • 2 slices sourdough bread
  • 6 slices of American Processed Cheese
  • Onion Bacon Jam (to taste, I covered the entire slice thickly with it)
  • 4 pats of Butter

Instructions

  • Butter the one side only of each slice of bread
  • Add 3 slices of cheese on the un-buttered side
  • Cover with Onion Bacon Jam to taste. I love it so I used a thick layer of it over the entire sandwich.
  • Add the last 3 pieces of American Processed Cheese over top of the Onion Bacon Jam
  • Top with second slice of buttered bread--buttered side up
  • Place the sandwich buttered side down, in a non-stick or cast iron fry pan over medium-high heat. Cover with a lid and let cook for 3-4 minutes or until golden.
  • Reduce heat to medium and gently flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty, golden brown and the cheese has melted. The second side will cook faster than the first so be careful.
  • If you want to make more grilled cheese sandwiches just increase the the ingredients accordingly and repeat the process. Serve while they're hot.

Notes

The sourdough loaf I used was quite wide so you might want to adjust the amount of cheese slices depending on the size of sourdough slice you use.

This roast beef cream cheese horseradish veggie wrap is one of those time-saver meals.  We’re always in a rush around here so having these quick and yummy recipes makes life that much sweeter.

You can get creative and change around the fillings.  Try thinly sliced turkey with cranberry jelly blended into the cream cheese. These are also great for parties. Just slice them thinner and put a bit more cream cheese around the closing edge to make sure it stays put when you cut them thinner.

Roast Beef Cream Cheese Horseradish Veggie Wrap

Ingredients

  • 8 slices of thinly sliced roast beef
  • 1 carrot shredded
  • half of a large zucchini shredded
  • 1 ounce of cream cheese
  • horseradish to taste (I used 2 tablespoons. We like the heat)
  • 2 large tortillas

Instructions

  • Blend the horseradish into the cream and spread it over one side of each tortilla
  • Put filling in the center of the tortilla starting with the shredded zucchini then the carrot and top with 4 slices of roast beef.
  • Fold over the sides then bring the end closest to you over and roll making sure you keep the sides tucked in.
  • Slice diagonally and serve.

Add a salad or soup and you have a complete tasty and nourishing meal.  If you’re feeding the kids you can forego the horseradish.

Grilled Cheese | Turkey Red Currant Jelly

We love grilled cheese sandwiches! And since this is Grilled Cheese Month I thought I’d try some new varieties.  This one is raisin bread, extra sharp white cheddar, thick sliced roasted turkey and red currant jelly. grilled cheese turkey red currant raisin bread | darndelish.com

Definitely a fork and knife sandwich.  Of all the things I’ve photographed lately, this is the hardest to do!

I know I must be missing something on presentation because taking a photo that looks as appealing as my favorite food bloggers photos is just isn’t happening with these sandwiches yet. Normally I would keep doing it until I got it right but then we’d have to have larger front doors to get out of.  Yes, we do eat what’s photographed here.

I was talking to hubby about this and decided I need a group of people to come over and just eat what I photograph so I can get this dang grilled cheese photography perfected. I think I might have to start feeding the neighbors or having the seniors at the high school come over for lunch. Maybe I should ask the football coach if I can feed the team.  I really need to nail this type of photo down.

Grilled Cheese | Turkey Red Currant Jelly

Yield: 2 sandwiches

Ingredients

  • 4 slices of raisin bread
  • 4 ounces of extra sharp white cheddar
  • 4 thick slices of roasted turkey (sized to fit the bread)
  • 2 tablespoons of melted butter
  • 2 teaspoons of red currant jelly or more to taste

Instructions

  • Melt 2 tablespoons of butter and brush on one side of each raisin bread slice.
  • Pile the thin slices of extra sharp white cheddar cheese, a teaspoon or so of the red currant jelly and then the slices of turkey onto the unbuttered side of two of the raisin bread slices.
  • Place the cheese and turkey topped bread, buttered side down, in a non-stick or cast iron fry pan over medium-high heat. Add more cheese and top with the other slice of buttered raisin bread. Cover with a lid and let cook for 3-4 minutes or until golden.
  • Reduce heat to medium and gently flip sandwich to the other side and cook for 2-3 minutes or until bread is toasty, golden brown and the cheese has melted. Be careful as the second side will cook faster than the first. Repeat process with the other sandwich ingredients to make the rest of your grilled cheese sandwiches. Serve while they're hot.
